Is science objective or subjective?

Werner Heisenberg, the famed Nobel prize winning physicist from the early 20th century, quoted "What we observe is not nature itself, but nature exposed to our method of questioning".

Does the act of us humans using our senses to perceive the universe as we see it, causes us to frame an understanding of reality as seen by us or is the absolute reality different from what we perceive? This is the fundamental question we face as philosophers and scientists trying to unravel the mysteries of this universe !

Finally, was the great Hindu philosopher saint, Adi Sankara, right in speculating that the world is an illusion and 'brahman' or the universal consciousness is the truth? (per Sankara, ब्रह्म सत्यं जगन्मिथ्येत्येवंरूपो विनिश्चयः brahma satyaṃ jaganmithyetyevaṃrūpo viniścayaḥ — Brahman is the only truth, the world is illusion, and there is ultimately no difference between Brahman and individual self)
